kozhi adas are really a tasty dish.This is my favourite one .You will like this tooo.Its a crispy crunchy kozhi ada fry.In other words savory crisp pocket filled with chicken .Its a dry and crunchy dish.the covering is similar to samosa.but this  have a special design .chicken filling are packed in a bag we can simply describe it like that.

                  Cutlet is an easy simple recipe everyone can prepare.We can make different cutlet if know one recipe.Here is the chicken cutlet.By replacing the main ingredient chicken we can make many different cutlets like vegetable cutlets ,beef cutlets etc.

  • Take a pan and add the peeled potatos ,salt and water together and cook until the potatos boiled .
  • Take a pan and add the chopped onions ,ginger,green chilly ,garam masala,pepper and add pinch of salt if required(already added salt in chicken and potatos  so becareful while adding salt) and stir well and cook for 5 minutes .
  • Take a blender and add the cooked chicken and  process well.its makes the chicken fully blend .so its easy to make the smooth cutelet balls and no crashes .
  • Allow the all  mixtures to cool and  add the cooked potatos and minced chicken into the onion mix .then mix all the ingredients well.
  • Take some mix and Make small  balls in required shape .
  • Beat the egg white and keep aside in a plate .

  • First step of roti pathiri is making the pathiri dough .for this hot a pan and add some water and salt .

  • Then add grated coconut ,coconut bites ,chopped small onions  and cumin into the  dough and mix well.knead it until the dough uniformly smooth and less sticky.
  • Roll out some portion of dough and take a small round shape ring and put the dough and press well and roll over the ring using a roller.and make others too.
  • Hot a pan and put some oil all over the pan and put this  into the pan and cook until its change colour into light brown and flip them in between .

                     Chatti pathiri is  a sweet  layered pastry mainly made in malabar regions. It can make in both sweet and savoury taste .but most commonly its made as sweet.Sweet ones made with sugar egg mixtures but the savoury made with the samosa fillings .
                     The main ingredient of the chatti pathiri is egg .Its a simple layered pufyy cake recipe .The first step of the recipe is making thin similar size pathiris .the pathiris are arranged in a layer manner so its called an another name adakkupathiri .Then assembling is the most important thing .the steps are given below.

Steps of making

Pathiri

  • mix the water,salt ,oil  and all purpose flour together and make  a dough .
  • Make small balls by this dough and      using a roller make round shape thin maida pathiris .paper thin size pathiris .
  • Heat a griddle and cook the pathiris in low flame  flip both sides .

Filling

  • Beat an egg with sugar ,ghee and cardamom  very well .
  • Heat a pan and add ghee ,raisins ,cashew  and stir them until its colour change into light brown.
  • Take a bowl and add the both mixture together and mix them well.

Coating

  • Take a bowl and add egg ,sugar ,cardamom and beat them and keep aside .

Assembling

  • Hot a nonsticky pan and spread 1 tbsp ghee on the pan alaround and keep one chapathi as first layer .
  • Dip the second pathiri in the egg mixture and coat the egg mixture and place it on the top .
  • Then pour  some egg mixture  on the top of the  pathiris  and  put another pathiri on the top .
  • Keep doing this process  adding pathiris and pouring egg mixture on it and finally pour the  remaining egg mixture  on the top and over the sides .
  • Garnish with cashew nuts , raisins  and  sprinkle cuscus seeeds on the top .
  • Bake in an oven for 15 minutes or cook this in a sealed vessel  or container.

                                 Muttamala is a sweet desert .Its not an easy recipe for beginners .The correct proportion of the ingredients give a perfect muttamala sweet.It requires one glass water for 10 eggs.this proportion makes it perfect.so becareful with the amount of  ingredients required.
                                         Its mainly prepare during ramadan season .mainly its make In mahi ,thalassery areas .they make this sweet during marriage functions for puyapla salkaram .
                      Muttamala is a sweet .its yellow in colour  ad its looks like noodles .This contains few steps but the making is something special way .It requires only egg yellow .We can make another sweet from the egg white its called mutta surkka .First making the sugar syrup .the next is adding the egg yolk into the sugar syrup through a hole.we can use holed chiratta  or holed glass or leaf for making this .

Muttamala(egg garlands)

  • At first hot a pan and take some water and add some sugar  into this then boil the water .
  • Add little egg white into the sugar syrup .and remove this after some time .This make the sugar syrup clean and dirty free  .any dirt  contained  in the  sugar will remove through this process.
  • The next step is the main .Adding the egg yolk  to the  sugar syrup.for this process take a plastic glass and make a hole in its bottom and add the egg yolk .
  • Add the egg yolk into the sugar syrup in a circular way  through the hole and take it out after some time .
  • Drain the excees syrup well and serve this into a plate .

Mutta surkka (egg white )

  • Beat the egg white well  and add the lefted muttamala sugar syrup into this and beat the ingredients well .
  • Add little cardamom powder into this (for good smell) and beat well. then steam cook this egg white in a bowl  and cut them into the required shape and serve along with the muttamala we prepared before.

                   Shebakiya is a sweet dish .Its a moroccan  sweet recipe  mainly prepared duing ramadan.Its crunchy cookie dipped in honey make its sweet in taste and sesame seeds are on the top gives it a perfect attractive look .It have a unique shap and taste .shape is not easy to make for the beginners but its easy to learn .
                                 Its easy to prepare at home.We can serve this as a evening snack or make this for any occassions as sweet.this can store for 1 month if this store in a non air container .if freeze this we can store this for 4 months .

  1. Sesame seeds-1/2 cup
  2. All purpose flour-2 cups
  3. Cinnamon-1/2 tsp

Steps of making

  • Take a pan and add the sesame seeds into it and stir  well  for 5 minutes  with a wooden spoon .take it out when the raw smell disappear .Then put this into a blender and process well.you will get a fine powder .
  • Take a small bowl and add half tsp of water and saffron and wait for few minutes before use it .
  • Take another small bowl and add dry yeast and mix it with little water and little sugar .and just wait for few minutes before use it .
  • Take a large bowl and add 2 cups of all purpose flour ,sesame seeds ,1/2 tsp of ground anes 1/2 tsp of ground cinnamon , baking powder and  a pinch of salt.mix the ingredients together  by hands and add 1 1/2 tsp olive oil and vegetable  oil and 1 tsp of melted butter  to the mixture and  continue mixing until the ingredients all corporated and add the saffron mix we prerpared before and yeast and 1 egg yolk.then add half cup of warm water little by little into the mixture  and make  a dough ball.
  • Roll the dough well its make it smoother and softer.then roll them and cut them by knife into 6 pieces .
  • Take each pieces and  roll it into a thin layer  using a rolling pan.take the shebakiya mould to make the design.then press the mould on the thin rolled layer dough and press it makes a 5 holed square shape on the dough .
  • Take the  5 holed layer dough and take the 1,3,&5 colum of the shebakiya dough on the middle finger of your right hand using left hand flip the columns  into  2& 4  columns inside out .this gives a flower shape .make the other pieces in the same manner.
  •  Take a pan and add some honey mixed with water  and  heat them til the honey reaches its boiling point.
  • Hot a pan and heat  some vegetable oil and  put the shebakiya flowers into the oil and when its fried put this into the honey mixture and when its fully soaked in honey take it out and put into a bowl .
  • The final steps is  garnishing.put the shebakiya into a plate and sprinkle sesame seedson them then allow to cool this shebakiya for several hours before serving .

Steps of making

  • Take a large bowl and add the 350 g of plain flour ,60g of cocoa powder,370g of sugar  ,a pinch of salt  and 150g of chopped chocolate .Then mix the ingredients together well using a sticking bind .
  • Take an another bowl and add 240ml of cold coffee,240ml of butter milk  and  210ml of vegetable oil then 3 eggs and beat  the ingredients together .
  • Next step is mixing the dry and wet ingredients .Put the dry ingredients to the wet ingredients bowl and  mix them well until its both become mix well.
  • Take a jar and put the batter into it .then arrange the cupcake muffin case and pour the mixture  and fill two thirds full with batter.
  • Preheat oven in 150deg  and bake for 22-24 minutes .allow to cool the cupcakes after baking .

Frosting

  • Take a blender and process 300g butter for 5 minutes .Then add  540g of icing sugar  and process well until its become fluffy .Add the 150 ml of salted caramel and blend them in a medium speed   until its fully mixed together .Check the batter you can see that its  become fluffy .
  • Take a piping bag and add the prepared batter into this and make designs on the cupcakes like in the picture and  add some caramel and crushed caramel chocolates  in the center like in the picture.Your cupcake is ready  to serve .


                                        Like the other days todays special recipe  is lemon cheese cake  .Llike in the picture its too tasty to eat .The special type of making give it the different  structure and its a yummy cheese cake with lemon flavoured .Its a simply divine and easy measurements recipe .Its so easy and quick to prepare .

  • The secret of the shape is in this step.after putting the butter bisuit mixture into the round pan arrange the mixture around the side of pan like in the picture(the outer layer ) . use a glass to press them sides .and hold it in refrigerator til the batter for cake is ready.
  • Take a blender and  add 3 eggs and 1/2 cup of sugar and  cream cheese   and  grated lemon  rind and 2 teaspoon of  lemon juice  and beat them until combined  .and pour the mixture into 
  • Take  out the butter biscuit mixture  from the refrigerator  and  add the prepared cream cheese batter into the pan .
  • Preheat oven into 160deg and  and bake for 50 minutes .once its  finish cooking just turn  off the oven and slip a wooden spoon to the oven  door and allow to cool it.it help from cracking the cake .after  this refrigerate this  for  4 hours or until its become cold .
  • Slice some lemon in round shape and just steam them and take some biscuit crushed and butter mixture and garnish like this  in the above  picture.Its ready to serve .

  
                                          We already make a dish using carrot .that was carrot halwa .the next recipe of using carrot is carrot cake .Every body like carrots .We tried many type of cakes .usually we make vanillacake at home .the carrot cake is  an another simple cake to make easily at home .Its very easy to prepare .
                        In this cake we add grated carrots That is  main differce of the cake from the other cakes .Its realy tasty and yummy to have and alos easy to make .Its a simple recip to try at home .the steps are below .

  2. Granulated Sugar -1 and 1/2 cup
  3. Vegetable oil-
  4. Grated carrot

  • Take a food processor and add the granulated sugar,4 eggs  and process well for 20 seconds . iIt looks like fluffy.
  •  Then add  1 and 1/2 cup vegetabel oil to  the  mixture through the  top of the processor  .
  • Take a bowl and add the prepared mixture into this and  add the peeled grated carrots in to the mixture and stir well .
  • Then add 2  and 1/2 cup of all purpose flour into the bowl and stir well.
  • Then add required spices  two teaspoon of cinnamon  Walnut and cloves  into the mixture .
  • Then add  1 and 1/4 teaspoon baking powder and 1 teaspoon of  baking soda  and 1/2 teaspoon of salt into the mixture  and  add 1 ounce chopped walnuts ,raisins and stir  them well using a spoon.
  • Next step is baking.for this take a pan  with baking paper and spray over the paper and pour  the cake  batter  into  the pan  and spread over the pan .
  • Place it in a 350deg preheated oven and bake for 50-6o minutes .then take it out after the specified time and allow to cool this for 10 minutes.
  • Next step is  to remove  the cake from the baking pan  for this  take  a spactula and separate cake edges from the pan and upside down the pan  and remove the pan  and remove the paper from the bottom of the cake .and wait for 20 minutes.
  • After 20 minutes  turn it back over and  take the cheese frasting and spread it over the cake using a spactula  and cut it into pieces and ready to serve .


                          Erachi pathiri is a malabari snack .Its my favourite snack ever .Whenever i think about erachipathiri my mouth always watered. We make this during ramadan and for any occasions . its a chicken  filling in a pouch  shape .and fried in hot oil.its crispy and tasty .

                      Erachipathri contains only two steps . First step is to make the chicken  fillings and next step is to make the rotis.then fill them in the shaped rotis and fry them in hot oil brings the tasty yummy Erachipathiri .

  Roti/Pathiri

  • Take a bowl and add plain flour , Wheat flour ,water  and salt  and make a soft ball.
  • Then divide them into small balls and and make small globes   .similar to poori size rotis /pathris.
  • Take a pathri and take some meat mix  and spread over the pathri .and place another pathri on the top and seal like outer cover and  foldthe edges like in the picture.

Frying

  • Hot a pan and put  some oil  and fry the prepared pathiris in the pan one by one until its become brown.
  • Dip the pathiris in the beaten egg and fry it  in a pan  and dont froget to flip them .

                             This is not  a main dish.its not have a specific name .We can call it sugar fruit mix.its sweet in taste and its a  side dish . its a very easy and simple  to make recipe .we Prepare this  during ramadan times for Nombu thura.We can replace the cutting of fruits into separate   plates  .because having every fruits in ramadan is not easy.we cant have too much food during ramdan .so this make every fruits come at one place .so its tasty,healthy and yummy and sweet.
                The main ingredient of the food is sugar .it makes the food  tastier one , nothing special in this recipe. For sugar petients we can make this with replacing the sugar with honey ,Simply chopped fruits mix with the sugar syrup .During ramadan we can make this and its a  fast  recipe.
                                                             
   Special fruits reuired to make this  is Banana,pomegranate and apple.the other fruits trequired to add is depend the peoples who make and the availability of fruits .

Ingredients

1.Fruits
     Apple
     Dates
     Banana
     Pomegranate
2.Sugar
3.Water

Steps of making

  • At first take a bowl and add the chopped fruits (Apple,Dates,Pomegranate,Banana ) .
  • Add required amount of sugar into the fruits .The amount of sugar needed is depend on the person who making this (for sugar patients   add honey by replacing sugar).
  • Add little water into the mix .(this water is helps   the sugar to spread the  whole fruits  mix ).this fruits mix is ready to Serve .


                                                   
                               This Koonthal Roast recipe belongs  to  my lovable mom  .The speciality of my moms dish is that it will be more spicier than others cooking.so it will be more tastier than everyone else cooking.

                                                    Then main ingredient of the dish is squid (koonthal). Squid is a good  food  source  for  zinc  and Manganese and high in Copper ,selenium,  vitamin B12  and riboflavin. So its   healthy dish .The  whole  body of  squid is stuffy. The beak  and gladius  are  the only  parts we  are not eating. So its a highly vitamin contained food .it belongs to the octopus family.
                                       The process of making this dish is very  simple . In simple words making of the masala mix is the first step.  Then putting the stamed squid into the masala mix and cook  well in  low flame .




Ingredients

  1. Onion
  2. Squid(kanava/Koonthal )
  3. Green Chilly       
  4. Tomato
  5. Red chilly powder
  6. pepper powder
  7. Salt
  8. Oil
  9. Turmeric powder
  10. Garlic paste
  11. Ginger paste
  12. Curry Leaves
  13. Coriander Leaves

Steps of Making

  • Take a pan and put  oil then add some garlic  paste,Ginger paste ,onion and stir well.when its become brown in colour add some chopped tomatos into this and  stir well. so cook until its becomes soft . 
  • Next step is to add the spices .First add red chilly powder, Turmeric powder, Pepper powder,Salt  and stir well.stir well until  the masala spread the whole mix .(takecare of not to burn the spices because it makes the whole dish bad).
  • Add the Clean and cutted squid into the masala mix and  mix well then add little water into this . Close the pan and cook in low flame for  around 20 minutes .Garnish with Curry leaves and Coariander leaves and Koonthal Roast is Ready.
  • Take a plate and add the cooked koonthal into this and serve .
